    I wouldn't worry too much. If there's a little fermentation going on (it will sometimes start back up just a bit once racked) it will create some CO2 to help blanket the top. I generally use a 6 gal. carboy to start and then rack to a 5. Keep the airlock on. The secondary will help stuff settle out more, but you shouldn't need to leave it there long before bottling.
