i made this about a month ago for our passover sedar.

this is an 8 pound beef shoulder in a 15 inch cast iron pan.
the liquid at the bottom is a red wine pan sauce.

and this is is what it looked like cut into. took just over 90 minutes to get to medium rare.

We cook out at least 3 times a week, sometimes more. I use cabinet scraps, mostly oak, to cook the meat, but every now and then I get some Pecan scraps - now that's a treat. Here's some ribeyes cooked over oak scraps.

That's about a half pound of Italian beef with hot giardiniera on top of a giant slice of sausage pizza....... Yup. That's how we roll in Chi-town.

What is this, you ask? Oh. Not much.... just a Port Wine and Confit Duck Sausage with Truffle Sauce Moutarde and White Truffle Cheese.

    Yea. That's right.

I'm not a fan of Al's. Too greasy, in my opinion. I got this at Mr. Beef & Pizza. It's not on the menu. A friend of mine suggested I try it and they made it for me.... after a few strange looks in my direction. It's now one of my top 5 favorite foods......

Just had some grilled Sweet Italians, Green Peppers and Onions Hero. Simple, inexpensive, yet hard to beat. I was going to take some pics but the wife gave me a funny look when I told her I was going to get the camera.
